Report on red crayfish (Procambarus clarkii) from Nanjing, Jiangsu Province People's Republic of China

Abstract
Nanjing was the first city in the People's Republic of China (PRC) where the red crayfish (Procambarus clarkii) was introduced and where crayfishes were used as human food. In recent years, production of crayfish in Nanjing has risen dramatically. In 1989 about 7,700 MT of crayfish was consumed in Nanjing alone. The estimated total harvest of crayfish in Jiangsu Province exceeds 10,000 tons.
